Mojo Chicken Wings (spicy, crispy, irresistible)

Admittedly, I had never heard of “mojo” marinade before making these wings. The word itself is unbreakably tied to the notorious villain Mojo Jojo of the Powerpuff Girls from my childhood.

Ah, memories. I was Bubbles by the way.

Anyways, Mojo is a Cuban citrus-based marinade made using sour oranges that originate there. Since I don’t have access to any sour oranges, I used a combination of regular orange juice and lime juice. You will want to marinate them overnight for the best flavor. Then when it’s time for dinner, bring them to room temperature, spice them up, bake, and done! No-fuss wings (and no clean-up!).

These wings come out perfectly every time: spicy, sweet, crispy, and irresistible. They disappear more quickly than Mojo Jojo’s evil plans.

  • 10 chicken wings Drumettes and flats separated
Marinade
  • 1 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1/2 cup fresh oregano or 2 Tbsp dried
  • 1/2 cup cilantro
  • 1/4 cup minced garlic
  • 1/2 onion
  • 1 Tbsp olive oil
Spices
  • salt
  • pepper
  • garlic powder
  • smoked paprika
  • cumin
  • oregano dried
  • cinnamon
  • cayenne pepper

Marinade

Instructions
  1. Add all marinade ingredients to a food processor or blender and blend until combined. Pour over chicken and marinate for at least 1 hour, but preferably over night.
  2. When ready to cook, remove from refrigerator and bring to room temperature. Preheat oven to 425.
  3. Line a large baking sheet with parchment paper. Let marinade drip off wings. Arrange them evenly-spaced on the baking sheet.
  4. Season with the spices to taste. I usually use about 1 Tbsp of each, give or take. Don't skip the cinnamon, it really deepens the flavor! But if you have an aversion to spicy, do skip the cayenne
  5. Bake at 425 for 40-45 minutes and serve immediately with a mild sauce and vegetable side.
